It seems to me that this is just Sherman's way of letting players know that all the trash talk, all the stuff that gets said in the heat of the battle, is meant for the battle, no hard feelings, and to let it stay on the field.
Like you said, he did the same thing with the mediocre Crabtree last year. Almost exactly the same way. Crabtree was just too butthurt to take it that way. (Though I cannot blame him, I'd have been butthurt too).
Brady, having won, took a moment to realize what Sherman was doing, then shook his hand, and made nice. It was easier for Brady to make nice than it was Crabtree, since Brady just won. But in both cases I think the gesture from Sherman was indeed, sincere.
That's why he vented like he did after the NFC championship last year. Crabtree shoved his face instead of shaking his hand and making nice. Again though, I understand Crabtree's feelings there.
Up until now, I always thought Sherman was trolling Crabtree when he went to shake his hand in the end zone. But now that I think about it, I think he would have been very gentlemanly had Crabtree actually shook his hands, like 'we're cool, no hard feelings, it's just a game'. Not that I was surprised how Crab reacted, but I think it's tough to say what Sherman really would have done with a different reaction. I like Sherm more and more as time passes.
